Thursday will ask for the Barolo — the 2016, if you still have it. Decant at seven for a nine o'clock table, and let it sit where the room is coolest. Nothing you serve beside it needs to be clever; braised short rib, or a risotto finished with butter, will flatter the tannin better than anything ambitious.

If the bottle stays closed, no matter. Two others in your cave enter their window this month, and one of them should be opened before the weather turns. The rest, as always, will keep.

At the stove: you have more dinner in the house than you think. Butter, an onion, and the fish bought on Friday will do handsomely. Sear it skin-down and leave it alone — impatience is what ruins it. Two items on the walk home, and nothing else is needed.

At the bar: one bottle stands between you and a proper negroni. Until it arrives, stir what you have — long, cold, unhurried. Ice is the ingredient nobody buys well. Express the peel over the rim, drop it in, and hand the glass over before it warms.

And for the man in the mirror: navy, always, when you are unsure. The brown shoes, brushed the night before. No more than three colours in the room, and music low from the moment coats come off. A host is judged in the first four minutes; everything after that is conversation.
